The tender teriyaki chicken and flavorful pineapple rice in this one-pot dish make for a delicious and filling meal. Great for an easy and quick dinner tonight!
Ingredients:
- 4 boneless, skinless chicken thighs, diced
- 1 cup uncooked jasmine rice
- 1 1/2 cups chicken broth
- 1/4 cup teriyaki sauce
- 1 cup pineapple chunks, drained
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Green onions for garnish optional
Instructions:
In a large skillet or pot, heat vegetable oil over medium-high heat
Add diced chicken thighs and cook until browned
Add diced onion and minced garlic, cook until softened
Stir in jasmine rice, chicken broth, and teriyaki sauce
Bring to a boil, then reduce heat to low and cover
Simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed
Once rice is cooked, stir in pineapple chunks
Season with salt and pepper to taste
Garnish with sliced green onions if desired before serving
