Ingredients:
- 1 can chickpeas, drained and rinsed
- 2 tablespoons vegan butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions:
In a large skillet, melt vegan butter over medium heat
Add minced garlic and saut until fragrant, about 1-2 minutes
Stir in paprika, cumin, salt, and black pepper
Add chickpeas to the skillet and toss to coat with the buttery garlic mixture
Cook for 5-7 minutes, stirring occasionally, until chickpeas are heated through and slightly crispy
Remove from heat and sprinkle with chopped parsley before serving
